Baked Kale Chips Recipe

Summer time is the time for fresh vegetables all around. It's also a perfect time to sit back, enjoy the sun and relax with a nice, cold beverage and a little snack. How does some delicious and healthy kale chips sound? All you need is kale, some oil and salt. Super simple to make. A little bit of salt to season really brings out the flavour and aroma of the kale chips. This recipe will only consist of salt and pepper as seasoning as a basic version, but feel free to 'spice' it up with some garlic powder, paprika, dried herbs etc. You'll be finished with your bowl of kale chips before you know it!

Kale is a wonderful nutrient-dense vegetable. Low in calories and a fantastic source of vitamins and minerals such as Vitamin A, B6, C, K, folate, manganese and more. I promise you won't feel guilt from indulging and snacking on kale chips. If you can't finish the entire batch, store it in an airtight container and it will last 2-3 days. Enjoy!

Baked Kale Chips Recipe

 (serves 2)
Prep time: 5 minutes | Cooking time: 15-20 minutes

Ingredients
1 bunch Kale
2 tbsp Vegetable Oil
Salt and Pepper to taste
Optional: 1 tsp of your favourite spices (garlic powder, paprika, cayenne, etc,)


Instructions
  1. Preheat oven to 350°F.
  2. Rinse kale in cold water and rip the leaves from the stem into bite-sized pieces with your hands.
  3. Dry the kale pieces with a kitchen towel.
  4. Line a baking tray with parchment paper and spread the kale pieces on the tray. Try to make sure the leaves do not overlap.
  5. Drizzle vegetable oil, salt and pepper over the kale and lightly mix with your hands.
  6. Bake for 15-20 minutes, until the leaves dry out and start to turn a little brown. Serve.

Note: The amount of bake time really depends on how dry the pieces of kale are and how the temperature varies in your own oven. If it's your first time trying this recipe, make sure to keep an eye out every 5 minutes or so after the 10 minute mark to check whether it is done.

I don't really know where to get kale. My in laws used to have a lot of those delivered for them but I was unable to keep the names and numbers of people who produce organic stuff. I am not even sure how to look for them in Facebook. Maybe it's also a wrong idea to inquire thru social media because these people would have want to respond exclusively to people they knew personally and not with random people looking for veggies. It's a little frustrating not knowing where to get my daily greens but I know this too shall pass. One day I can get in that list of deliveries.

Sorry to hear that you are having difficulty with veggie deliveries. Do you have markets/grocery stores where you live? I usually get my kale (and other greens) via local farm markets grocery stores.
