In my household, it is fairly common that there a few ripened bananas left over by the end of the week. So during weekend mornings, I switch into baking mode! A freshly baked batch of banana bread makes for a great grab-and-go breakfast throughout the week.
The walnuts and chocolate chips are optional and you can certainly mix and match with whatever fillings (assorted nuts, dried fruits) that you like, or just make a plain banana bread. I personally like this classic combination, enjoy!
Banana Walnut Bread with Chocolate Chips Recipe
Prep time: 15 minutes | Bake time: 55-60 minutes
1 ½ cup All-Purpose Flour
1 tsp Baking Soda
¼ tsp Salt
¼ tsp Cinnamon
¼ tsp Nutmeg
3 medium Bananas (bananas that are ripened with black spots are the best for this)
½ cup Brown Sugar, lightly packed
1 tsp Pure Vanilla Extract
½ cup Butter, melted*
½ cup Walnuts, coarsely chopped, set aside a small handful for topping the bread
½ cup Semi-Sweet Chocolate Chips
*To melt cold butter straight from the fridge, pop it in the microwave for 15 second intervals until the butter is melted. It usually takes 2-3 cycles.
** To check whether the loaf is done, insert a dry toothpick, fork or knife into the center of the bread. If it comes out clean, then it is done! (There may be slight chocolate smears, but that's okay.)
