Here is one of my favourite muffin recipes. Think of days where you want a brownie, but wish for a slightly healthier alternative. It's not too sweet, and perfect for breakfast, as a quick snack and a small dessert! It's a delicious, chocolate treat while providing a good amount of fiber from the chia seeds and oats. Enjoy!
Chocolate Chia Oatmeal Muffins Recipe
(makes 6 muffins)
Prep time: 10 minutes | Bake time: 30-40 minutes
1¼ cups All Purpose Flour
⅓ cup Sugar
½ cup Steel-Cut Oats (or Rolled Oats)
¼ cup Chia Seeds
⅓ cup Cocoa Powder
1 tbsp Baking Powder
1 tsp Salt
1 cup Milk
¼ cup Coconut Oil (Canola Oil will do just fine)
1 tsp Vanilla Extract
½ cup Semi-Sweet Chocolate Chips
* To check whether the muffins are done, insert a dry toothpick into the center of one of the muffins. If it comes out clean, then it is done!
